A New Mexican Restaurant Comes to Downtown Windsor
A new Mexican restaurant has come to Northern Colorado, taking over the space of a former Mexican restaurant in Downtown Windsor. For many years, the location held a popular Hawaiian restaurant, but this Mexican place is getting popular, already.
Windsor's Cancun Mexican Grill & Cantina Becomes Something New
In January of 2022, Cancun Mexican Grill & Cantina opened in Downtown Windsor at the corner of 5th Street and Main, taking over the space vacated by Okole Maluna, which had been in operation for 16 years. It was the second location for Cancun, which opened in Greeley in 2016; they opened their Fort Collins location in 2023.
In early October of 2026, it was announced that the manager of the Windsor Cancun, Karen Arechiga, had taken over ownership of that location and turned it into her own restaurant, Casa Mestiza. On the restaurant's Facebook page, they have:
Casa Mestiza el lugar donde se unen los sabores del mundo en un solo lugar, Ven a disfrutar del sabor que hará que no quieras parar de probar. 🔥 Somos un pedazo de todo el mundo
Which translates to:
Casa Mestiza, the place where the flavors of the world come together in one place. Come enjoy the flavor that will make you never want to stop tasting. 🔥 We are a piece of the whole world.

I stopped in for lunch in mid-October of 2026, and the place was busy; it all looked familiar, as it did when it was Cancun Mexican Grill, which was fine with me. I looked over the menu and found many items that I wanted to try; I went with the Queso Burrito. That burrito, with the Mexican crema sauce on top, was terrific.

I suspect Casa Mestiza will find many years of success at 431 Main Street.
