One of the most popular food trucks in the Fort Collins and Northern Colorado area that began in 2012, announced that it was for sale in the fall of 2025. If nobody were to step and take over the operation, The Choice City would be missing a favorite.

While there are dozens and dozens of food trucks in the Fort Collins area, one name has stood out for over a decade: The Waffle Lab. The name gives off the vibe of chefs creating menu items while wearing white coats; the truck has given off "fun" vibes and great menu items since first hitting the road.

If you've lived in the Northern Colorado for any time at all, you've heard of The Waffle Lab; a food truck centered around Belgian Liege waffles. The truck has been at probably more than 100 events, including dozens of food truck rallies. That PB&J waffle was always my favorite; it paired well with a craft beer from New Belgium.

In 2020, a set of new owners took over the operation of The Waffle Lab which at the time had the truck, a brick-and-mortar location on Mason, and a satellite "Burger Lab" in The Exchange. By 2024 only the food truck remained; by the end of September of 2025, it seems they're ready to step away, completely.

With luck, the Northern Colorado area hasn't said a final "goodbye" to The Waffle Lab, and another team will come in to keep it afloat.
