Fort Collins is Getting a Dr. Seuss-Themed Breakfast Restaurant
Kids and adults alike will finally get to experience the joy of eating real green eggs and ham in Fort Collins, as a Dr. Seuss-inspired breakfast restaurant is coming to town in late December.
According to the Coloradoan, Sammy's Breakfast Bar will open at its 4613 S. Mason Street location in Midtown Fort Collins by the end of the year. It will serve Dr. Seuss-themed breakfast and lunch entrees and will be decked out in Dr. Seuss character artwork.
Sammy's co-founder, Ron Leonhard, previously co-founded Paris on the Poudre Coffee House and Elliot's Martini Bar in Fort Collins. His newest restaurant is inspired by the popularity of some of Fort Collins' popular breakfast spots like Silver Grill Cafe and Snooze, but is far enough away from the parking nightmare that Old Town Fort Collins imposes on local businesses.
As for those green eggs and ham, Chris Smith told the Coloradoan, "a little bit of green food dye will do the trick." (So yes, I believe there will indeed be green eggs and ham.)
