Well we are winding down  election day. No matter who your candidate is, you’re going to need some snacks to get you through this evening.

Taken from the website www.truefoodmovement.com below are some “good for you” snack options that you and your family might enjoy as you gather around to await election returns …

Nervous Nellies Snacks:

Crunchy is the way to go when you’re nervous. It’s tremendously satisfying to have something “al dente” in your mouth to alleviate a little stress.   Healthy Options: Carrots, celery sticks, and apple slices.

 Healthy (But Still Sweet) Options:

Pineapple chunks, orange slices, and mango slices.

Alternative to Potato Chips and Onion Dip Option:

Whole Grain Pita Chips served with Fresh Salsa or Roasted Red Pepper Hummus

Open Up The Bag Option:

Whole Roasted Almonds, Pistachios, or Trail Mix

The “I Have A Little Bit of Extra Time To Prepare” Option:

SPINACH SQUARES

What You Need

2 packages of organic frozen chopped spinach (drained)

4 tablespoons of butter (this will be in a dish warming in the oven or in a muffin tin)

3 eggs

1 cup of flour

1 cup of milk

1 teaspoon of salt

1 teaspoon of baking powder

1 pound of shredded organic white cheddar cheese

1 medium-sized white or yellow onion, chopped

What You Do

1. Mix the ingredients in a bowl and spoon the mixture into a warmed oven dish with melted butter on the bottom. Bake at 350 degrees for 30 to 40 minutes. That’s it. Because the butter is already melting in the pan, it will brown and create a crust.

For a different take, try spooning the ingredients into mini-muffin tins. (Just remember to guide a knife around the cooked spinach muffins before trying to get them out of the tins when they’re done.)
