The cafe was advertised as a tourist attraction and was opened and operated by Irene Evelyn Felmlee. According to the Historical Photos of Fruita & Western Colorado Facebook page, the Chuck Wagon Cafe was probably owned by her husband, Bill.

The Chuck Wagon Cafe was made up of two Quonset huts put together, which created two rooms. The two rooms in the cafe were the Gun Room and the Lariat Room. Quonset huts became very popular after WWII because they were in great supply.

According to the Historical Photos of Fruita & Western Colorado Facebook page, the Quonset huts were insulated and had wooden walls and floors. The Quonset huts were used as all sorts of buildings following the war. The Quonset huts were used for buildings like the Chuck Wagon Cafe, college dorms, houses, and more.
