Today (April 12) is National Grilled Cheese Day so why not grab some bread, cheese and you favorite spread and cook some up for dinner or a late-night snack.

Grilled Cheesery says the history of bread and cheese being served together has been around for centuries. It wasn't until the 1920's someone decided to take a piece of bread shred some cheese on it and grill it.

Grilled cheese went from being served open-faced to sandwiching sliced cheese between two pieces of bread to make it more filling.

Grilled cheese sandwiches were popular during the American Great Depression and also for the troops in World War II.

Today's grilled cheese sandwiches can be as simple as a cheese slice between the grilled sides of slices of bread to fancy versions of the classic that include varieties of cheese, breads and the addition of meat and vegetables.
