One of my goals during my recent vacation time was to spend some time in the kitchen trying out some new creations. I found a recipe for Almond Joy Cookies that looked really good, so I thought I would give it a try. Oh my word! They were indeed delightful, and so I wanted to share the recipe with you!

INGREDIENTS
1 cup butter
1 1/2 cups white sugar
1 1/2 cups brown sugar
4 eggs
3 teaspoons vanilla
4 1/2 cups flour
2 teaspoons baking soda
1 teaspoon salt
5 cups chocolate chips
2 cups sweetened coconut
2 cups chopped almonds

DIRECTIONS
Pre-heat oven to 375.
Combine dry ingredients, and set aside (Hint: This does not include the chocolate chips, coconut, and almonds
In a large bowl, cream the butter and sugars together. Beat in the eggs one at a time, stir in the vanilla. Stir in the dry ingredients until well mixed, then stir in the chocolate chips, coconut, and almonds.(Hint: At this point you may just want to resort to kneading it with your hands)

Drop by rounded tablespoonfuls onto a lightly greased cookie sheet. (HINT: Don't make them TOO large, or they won't get done in the middle)

Bake for 8-10 minutes.(HINT: 9 minutes seemed to be a good time)

This should set you up with about 6 dozen delicious cookies. Enjoy!
