The drought is officially over, and I’m not talking about the dry weather we’ve had all summer. Lately, our family garden has gone from barely producing to bushel baskets full of fresh vegetables. Zucchini is especially abundant right now. However, there are only so many ways you can slice, dice and shred before running out of ideas on how to prepare it.

We’ve shared with family, friends and co-workers to the point even some of them turn a cold shoulder when I even mention the word Zucchini.

Meantime, I’m headed out to help my wife carry some more of these delicious, nutritious vegetables in from the garden and see what new and exciting ways we can eat and celebrate the abundance of zucchini. I hope at least one of them includes a piping hot slice of zucchini bread.
